BBQing, grilling and smoking [meats, that is] are standard summertime fare at our home. Glenn is a pro at all things outdoor cooking. We had been buying various rubs to season everything from chicken to pork shoulder to briskets. This summer we decided it was time to make our own. After some searching, I found this recipe on the Char-broil website, and it is excellent!
Diva Q’s Pork and Chicken Dry BBQ Rub
Prep Time: 15 minutes Yield: 2 cups
1 cup brown sugar (packed)
1/4 cup smoked sweet paprika
3 tablespoons Morton’s Kosher Salt
2 tablespoons coarse ground Malabar Black Pepper
2 tablespoons mild chili powder
2 tablespoons granulated garlic
2 tablespoons granulated onion
2 teaspoons Piri Piri or chipotle powder [I used Ground Chipotle Pepper]
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon rubbed thyme
Sift all of the ingredients through a fine mesh.
Store in a sealed airtight container.
I use a Parmesan cheese shaker [like the kind in restaurants] to apply the rub to the meat.
