I have quirks! I’m far from being a hoarder. Yet, I am a “selective” hoarder. Meaning there are a few items in my cupboards, refrigerator or pantry that I won’t let run out. For instance, toilet paper…always need at least 4 rolls in reserve. Olive oil…at least 1 back-up bottle. Beer…an emergency 12-pack…cold. Munchies…a hunk of cheese, box of crackers, chips and salsa…just in case. I mean, you never know when friends may pop in, and they may be hungry! One always needs to be prepared 🙂 This salsa recipe, is a fabulous one to have on hand. I’ve seen many, many different versions of blender style salsas on the internet. The recipe we started with has morphed into what you see below. We’ve changed and switched up ingredients to find the marriage of ingredients that made us say, “That’s it…perfect!”. It’s spicy enough for Glenn to sweat [especially his head!], yet mild enough I can down it with gusto. Feel free to raise the level of heat to your heart[burn] desire!
Blend It Up Salsa
- 1- 14 oz can fire roasted diced tomatoes
- 1- 10 oz can mild Rotel
- 1/2 medium onion, chopped in 1/4s
- 1 large clove garlic, peeled
- 1/2 jalapeno, seeded
- 2 teaspoons honey
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- handful of parsley [leaves only, washed]
- juice of 1 lime
Put all the ingredients in a food processor or blender and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency.
Taste for seasoning and adjust to taste. Serve with chips or any of your Tex/Mex favorites.
