Cheese, cheese and more cheese. Unless the offering is fresh veggies with a dip [hummus, dill, ranch] it seems many appetizers resort to cheese. It may be the main ingredient [cheese platter anyone] or maybe it simply enhances the particular offering. We in the Midwest are often accused of putting cream cheese is everything! I beg to differ…sure there’s cream cheese in my cheese ball, but not in these two! So there, we only use it 1/3 of the recipes we make 😉
The easy-peasy dip of entertaining! This has been my go to appetizer since late last winter. Why?? It’s easy [no cooking required], somewhat healthy and delicious. A friend first brought it to a gathering at our home last February, and I’ve probably made it a dozen times since then. It uses only 4 ingredients… a low-fat variety of feta sends it to the more “guilt-free” department.
1 extra large tomato, bite-size dice [or 3 standard Roma tomatoes]
1 6 oz container crumbled Feta cheese [I use Low-fat]
1/2 teaspoon Cavender’s All Purpose Greek Seasoning
2-3 teaspoons extra-virgin olive oil
On a large platter, layer the diced tomatoes and feta cheese. Sprinkle the Greek seasoning on top. Drizzle with the olive oil. Stir gently to mix. Serve with crusty bread, pita chips, small pita rounds or crackers. I told you it was easy!

This recipe hails from Martha at A Family Feast. Martha used a mix of sharp cheddar and Manchego cheese on hers. I went with a sharp cheddar and applewood smoked white cheddar on mine, simply using what I had on hand. The potatoes are sliced in wedges, cooked in a high-heat oven until crispy, and loaded-up with your favorite toppings to dress them up.
