Meet my new morning love…123 Energy bites. Little balls of nuts, seeds & oatmeal all held together with honey and peanut butter. Lots of good stuff, with a touch of the sweet stuff to satisfy “that” tooth! And easy…so, so easy to make.
When hunger strikes in the early hours of the day, I tend to eat what is “ready to eat”. Things like cookies with my coffee. Now I know that’s not the “right” choice. But hey, I’m being honest here. Having these little bundles ready to pop in my mouth, make me feel a little better. Better knowing at least I’m eating something with nutritional value, but also better in the sense they give me a spurt of energy, fuel to start my day. These little bites came to be because I had a huge container of Snack Mix in the house that no one was eating. It has a lot of good stuff in it – sunflower seeds, pumpkin seeds, raisins, cashews, almonds – but it wasn’t “going”. I even tried putting it in little single serving size containers, and it still wouldn’t go. Creativity needed to step in! As good as the mix is, it wasn’t easy to eat. Those little seeds kept slipping through the fingers! So a bundling was required 🙂 Hence…the 123 Energy Bites.
Why am I calling them 123 Energy Bites? Well, they’re as easy as 123! 1. Dump in ingredients in a bowl; 2. Mix all those ingredients up real good; 3. Form into balls! Done 🙂
1 cup mixed seeds/nuts/dried fruit [pumpkin sees, sunflower seeds, cashews, almonds, raisins]
½ cup old fashioned oats
3 Tablespoons peanut butter
2 Tablespoons honey
1. Dump in a bowl…
2. Mix it all up…
3. Form into balls [place on parchment lined baking sheets].
…okay…there is a “4”… refrigerate until firm 🙂

Makes about 2½ dozen 1 inch-diameter balls
