I had a vicious {sweet} attack a few nights ago. An attack that was so severe, I was forced to bake.

Brownie Topped  Peanut Butter Blondies feastingwithfriendsblog.comI think my attack actually started one day prior. Less than 24 hours before the big bake I scrolled upon the most delectable looking peanut butter blondies. Earlier in the day I thought I was craving peanut butter cookies.

If I was…I soon wasn’t anymore. Sheila @ Sweet Baked Life posted her Peanut Butter Blondie recipe and everything changed for me! Ahhh…these blondies were much like a peanut butter cookie…but much easier to make. One pan… one batch… and you’re done!

Seriously, the man would be quite happy if the only thing that came out of the oven was chocolate chip cookies!

Brownie Topped  Peanut Butter Blondies feastingwithfriendsblog.comWell, all thanks go to Glenn (and his love of chocolate) for the second layer in these bars. I topped the peanut butter blondie batter {say that 3 times fast} with a half recipe of my Chocaholic Brownies. They were delectable.

Needless to say, three of us were standing around the kitchen counter… warm brownies in one hand and a glass of milk in the other… at close to 10pm on said night! But, ohh, I did sleep well. Craving cured!

Brownie Topped Peanut Butter Blondies

Chocaholic Brownie Ingredients (Note: this is ½ of the original recipe):
3/4 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter (1 stick)
3 ounces unsweetened chocolate squares (3 squares)
1/2 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 large egg yolk
1 teaspoons vanilla extract
1 cup semisweet mini chocolate morsels


Make the blondie layer according to directions and spread in the greased (9×13-inch) baking pan. Preheat oven to 350°F.

In a medium bowl, whisk together flour, baking powder and salt. Set aside.

Bring about 2 inches of water to a boil in a medium saucepan, then reduce heat to allow a steady simmer. In a large heatproof bowl (I used my mixer bowl), add butter and unsweetened chocolate squares. Place the bowl over, but not touching, the simmering water. Allow to heat until butter and chocolate melt, stirring occasionally to incorporate.

Once melted, remove the bowl from the simmering pot. Whisk in both the brown and granulated sugars with an electric mixer. Whisk in the eggs and egg yolk, one at a time; add the vanilla.

Add the flour mixture (add about 1/2, mix well, then add remaining flour) to the chocolate mixture. Fold in the chocolate chips.

Carefully pour the brownie batter over the blondie batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted in the center of the brownie/blondie comes out clean.

Cool on wire rack until cool enough to handle! Yum!
